Job Duties:
Cut, trim and bone standard and custom cuts from whole carcasses of beef, pork, lamb and chicken for sale at self-serve counters or according to customers' orders
Prepare meat for special orders, displays and/or delivery
Shape, lace and tie roasts of meats and poultry
Wrap or package fresh or frozen meats and prepare for presentation
Grind, mix, stuff, link and smoke special sausages
Scale and grind meats
Manage inventory, determine amount, product line and freshness of products according to company and customer requirements
Prepare broths, rendered fats and cooked, ready to eat items.
Smoke sausages, hams, bacons and other meats
Cut whole carcasses, sides and quarters
Assist customers with their meat selections, providing knowledgeable recommendations
Maintain cleanliness and organization in the butcher area and kitchen.
Adhere to Hazard Analysis and Critical Control Points (HACCP), Canadian Food Inspection Agency (CFIA) and food safety standards
Ensure food storage conditions and food safety regulations are met
May supervise, train or transfer skill to other butchers or meat cutters

Requirements
Attention to detail
Can work independently or within a team
Strong written and verbal communication skills
Collaborate with team members to ensure efficient operations within the food industry
Punctual
Ability to use cutting and smoking equipment & machinery safely, effectively and keep clean
Excellent knife skills
Can stand for long periods of time
Able to lift 50 lbs or more
Food safe handling certificate is an asset but can be provided
Not afraid to get messy
Willing to work weekends and early mornings as required
