Position Summary

The Sous Chef assists the Executive Chef in leading the kitchen team, ensuring the smooth operation of culinary activities, and maintaining high standards of food quality, presentation, and safety. This hands-on leadership role is vital in training and mentoring staff, managing kitchen operations, and supporting menu innovation.

Key Responsibilities

  • Create and manage kitchen staff schedules, ensuring adequate coverage and efficient workflow.
  • Train and develop junior kitchen staff to enhance their skills and culinary knowledge.
  • Lead by example, fostering a positive, high-performance work environment.
  • Oversee food preparation, ensuring adherence to recipes, presentation standards, and consistency.
  • Maintain a clean, organized, and safe kitchen environment, complying with food safety, hygiene, and health regulations.
  • Support prep work, cooking, and plating as needed to meet operational demands.
  • Monitor stock levels, assist with ordering ingredients, and manage inventory to minimize waste and ensure quality.
  • Ensure kitchen equipment is in good working condition and report maintenance issues to the Executive Chef.
  • Assist the Executive Chef in menu planning, developing new dishes, and updating seasonal offerings.
  • Manage the quality of food service during service hours, ensuring high standards in all dishes.
  • Address customer complaints or special requests swiftly and professionally.
  • Maintain records of food costs, inventory, and kitchen expenses.
  • In the absence of the Executive Chef, take responsibility for overall kitchen operations, including food quality, staff management, and service oversight.

Requirements

  • Minimum 2 years as a team leader in the culinary field is required.
  • Fine Dining experience is mandatory.
  • Journeyman's papers or international equivalent required.
  • Eligible to work in Canada full-time.
  • Diploma/Certification in a Culinary discipline an asset.
  • Proven track record of cost control including food, equipment, labour and wastage to meet the goals.
  • Strong interpersonal and problem-solving abilities. Highly responsible & reliable.
  • Ability to work well under pressure in a fast-paced environment.
  • Passion for culinary excellence, with a keen eye for detail and presentation.
  • Strong focus on guest needs, remaining calm and courteous at all times.
  • Physical ability to stand for long periods and lift up to 50 lbs.
