JOB OVERVIEW

The Area Executive Chef of Canada oversees all back of house operations for the multiple Eataly locations, ensuring quality standards and financial goals are consistently met.

Reports directly to the VP of Hospitality and functionally to the Director of Culinary – Eataly North America. Manages the Head and Sous Chef team.

  • Directs and organizes the store back of house team to guarantee quality, consistency and maximize profitability.
  • Leads a team of Head Chef and Sous chef to drive success in their individual outlets
  • Supports the leadership team in pre-opening phase of upcoming Eataly stores
  • Coordinates the execution of recipes and menus focused on Italian authenticity, seasonality and high-quality ingredients in alignment with the Culinary Director and Senior Culinary Manager
  • Supervises the operation of Central kitchen and preparation to guarantee quality and consistency.
  • Partners interdepartmentally with the store senior leadership team and with corporate to executive initiatives, plan special events and share information.
  • Analyzes financial data, builds a budget, and develops strategies aimed at increasing efficiencies and profit.
  • Collaborates closely with the Store Director and Restaurants GM's to create a seamless and efficient restaurant experience
  • Participates in employee hiring, assignment, training, payroll, scheduling, evaluations and terminations.
  • Documents, investigates and resolves employee and guest incidents
  • Focuses on theoretical and actual margin management in coordination with Culinary Director, kitchen manager and the FP&A team.
  • Works closely with the Director of Culinary and corporate executives on any development projects for their area of responsibility
  • Manages and mentors' upper management within stores
  • Responsible for overseeing store specific restaurants/concepts and communicating quarterly plans to corporate team.
  • Coordinates procurement and assists in transferring items and products between stores
  • Performs other duties as required or assigned

Qualifications

QUALIFICATIONS

  • 7+ years of chef experience, including 5+ years of management experience
  • In-depth understanding of Italian cuisine
  • Exceptional communication, leadership, motivational and team-building skills
  • Demonstrated problem-solving, organizational, analytical and business management skills
  • Knowledge of kitchen equipment and procedures, safety and sanitation regulations
  • Advanced proficiency in Microsoft Excel, PowerPoint, Word and Outlook
  • Bachelor's Degree or degree from a post-secondary culinary arts training program highly preferred

JOB REQUIREMENTS

  • Availability to work onsite with a flexible schedule including evenings, weekends and holidays
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, standing or walking in a restaurant environment
  • Ability to operate commercial equipment including stand mixers, ovens, torches, etc.
  • Availability to travel up to 10% of the time
